This past Christmas, my lovely wife gifted me with the equipment I needed to brew beer with only crushed grains. Th<span style="font-family: inherit;">is switch from prepared malt syrups to only raw grains, is called "all grain" brewing. Grain is the backbone of beer, and provides the beer with the majority of its color and flavor. It involves the selection of a variety of barley and/or other grains that are crushed to open their husks. Hot water is added to "soak" the grains. This activates the enzymes that were produced during the malting process, and it converts the remaining carbohydrates into simple sugars. The process of collecting that "flavored water" is called "mashing" and happens after approximately 60 minutes of soaking.</span></div>

<span style="font-family: inherit;">One of the first things that any home brewer must do is to choose a recipe. Any good brewing store like Northern Brewer (in Milwaukee, and Minneapolis) has plenty of tasty recipes. These are </span>often <span style="font-family: inherit;">forwarded by the store staff who invents them, and by other home brewers who have had favorable reactions to their own recipes. Once the recipe is settled upon; the grains must be chosen in the amounts that are called for. Then those grains need to be crushed. A yeast strain that compliments the recipe is also selected. Most yeast strains are in the refrigerated coolers. Some need to be "started" from dry, and others like liquid Wyeast; smacked to pop open the inner pouch to begin the mixing process. Yeasts need to be started about 12 hours ahead of the brewing process to propagate the yeast cells and make them double and triple in volume before being added to the wort.</span></div>

So...that's basically it. Within 12 hours the fermentation begins...turning "wort" into the "beer" product that we all know and love. The (first) fermentation phase will last approximately 1-2 weeks until the bubbling stops. But for now...that bubbling is music to the ears, and (for me) positively riveting to watch!</div>

The (second) fermentation is down the road a couple weeks. At that point I will transfer (slowly) the beer from the first carboy (leaving the sediment on the bottom of the first carboy behind) and into a second clean carboy for another 3-4 weeks before bottling and kegging. </div>

Is it just me or has this gone too far? I am (of course) talking about the weird and destructive automatic habit some consumers of fresh produce have of needless sweet-corn exposure! I was in a local Woodman’s the other day, standing near the fresh fruits and vegetables when it hit me…that woman has parked her wire grocery conveyance near that bale of corn, and is busily peel-peeking as if her very life depended on each cob selection. Grasp, grip, peel-back, discard – grasp, grip, peel-back, discard – right into a large black plastic garbage can liner parked nearby the bale. What the Hell!</div><br />
<div></div><strong>Why do we (not me…but YOU) continue to do it?</strong><br />

<div></div>I’m sure that at one point in your life might have actually done it. At the very least, you were undoubtedly a material witness to the unholy act once or perhaps multiple times. You want fresh ears of sweet corn, so you sidle up to the store display; grab the nearest cob; grasp the green husk and giver a rip…peeking for Lord knows what!<br />

<div></div>Did you ever stop to ask yourself why? Sure it must have all started long ago quite innocently and even perhaps out of necessity, but now? Back in “the day” maybe a plague of marauding locusts had horrifically descended on a struggling rural farmstead, (totally unbeknownst to poor Farmer Ralph) and that tainted harvest somehow made itself to market. A quick visual check on a few ears might have saved you from trading in your prized hen once the fouled maize had been detected, but nowadays I am convinced it’s an activity that you <em>think</em> you are somehow expected to, supposed to, conduct or you will lose your consumer-credibility with bystanders. Kinda the way there is an unwritten rule about a dozen eggs selected from the cooler. Unless and until you take that “lid-lift glance” you are but a simpleton rube about to be duped into purchasing a dozen selections of hen-fruit which multiple others (far more savvy consumers than you could possibly aspire to be) have expertly bypassed. Or perhaps it’s just a crazy Pavlovian reflex…something you cannot <em>help</em> from doing. <br />

<div></div>In my logical argument against proliferating this bizarre ritual (or self-proclaimed God-given consumer right) I offer the following counter-questions and arguments to ponder:<br />

<li style="border-bottom: medium none; border-left: medium none; border-right: medium none; border-top: medium none;">Core-sampled a cantaloupe to gauge its sweetness?</li>

<div style="border-bottom: medium none; border-left: medium none; border-right: medium none; border-top: medium none;">Perhaps grocery stores themselves are to blame for weakly caving in to selfish and pissy consumers who whined about wanting to shuck the entire ear before leaving the store; by placing an all-too-handy garbage pail nearby. I say that because not only were there the entire cob-shuckers busily shucking their choices, but as I said earlier; people peel-peeking and discarding entirely fine cobs also into the can, after they had dismissed their quality for one reason or another. </div><br />

Amongst the myriad of second class items, I sadly saw plenty of (now completely) peeled sweet corn covered in plastic wrap, that perhaps had been rescued from the waste bin prior to being cruelly discarded. </div><br />

I could go an and on as to the wonderful human being she was, but for now, I will choose to honor her memory with one of my favorite homepun recipes; the Mock Chicken Leg. Now my brother Chuck Devereaux (Yes, that Chuck Devereaux of <a href="http://www.momentsintimeportraits.net/">Moments in Time Pencil Portraits</a>) just KILLS at this recipe! He makes the best Mock Chicken Legs this side of the Artic Circle. But I am a close second. Interestingly enough...these yummy "hand foods" taste nothing like chicken (and that's more than OK, trust me) so about the only thing I can think of, for them to earn their coveted moniker is the fact that you can pick them up somewhat like a chicken drumstick and gnaw on their goodness (ala Henry the VIII at a food orgy). And that reminds me...I once went out birding (as Birdstud) and looked high and low for the infamous and cagey "Mock Chicken" for an entire afternoon...but that's another story for another blog.<br />

</div>Here's an old family favorite from way back. At least as far back as <a href="http://www.spam.com/">Spam</a> goes anyway...(and I don't mean junk mail) It's a definite crowd-pleaser too. Both young and old find themselves going back to the pot for another tasty helping. You may find (or know) folks who turn up their nose at the thought of Spam; but just pop a plate-ful of this in front of 'em and watch.<br />

It's not complicated, and it's not expensive. I can get this made for about $ 8.50 and it will feed 6-8 people easily<br />

Plus, you'll need Spam's natural fats to provide the necessary "lube" to your meal without having to put in more oil or butter for no reason. Trust me.}</span></li>

<li><span style="color: #009900;">- Luzianne Cajun Spice (or some other spicy-spice you enjoy)</span></li>

Get about 1/2 of your pot full of water and start boiling the water. Once boiling, dump the entire bag of noodles in and stir with the wooden spoon. Reduce the heat and let 'er cook. ~ <strong>IMPORTANT</strong> ~ Only boil your noodles about 12 minutes, leaving them "almost" done, but no where near mushy!<br />
